Anti-Inflammatory Chicken & Vegetable Soup

Serves 4

Ingredients:

  • 4 tsp Coconut Oil or Olive Oil

  • 1 Red or White Onion, finely chopped

  • 2 Carrots, peeled and diced small

  • 1 Sweet Potato, diced small

  • 2 Celery stalks, finely chopped

  • 2 Cloves garlic, crushed

  • 1 tsp Turmeric

  • 1 Tbsp Ginger, peeled and grated

  • 1 tsp Fresh Thyme or 1/2 tsp Dried Thyme

  • 1/2 Cup Fresh Herb mix, chopped (2 Tbsp Basil, 2 Tbsp Parsley, 2 Tbsp Coriander, 2 Tbsp Chives or spring onions) or 1 tsp Dried mixed Italian herbs

  • 1 Handful Fresh green beans, chopped

  • 3 Chicken Breasts (400g), cut into small chunks

  • 2 Handfuls Baby Spinach or Kale

  • 1.5 Liters Water or Chicken broth

  • 1/3 tsp Salt

  • 1/2 Squeeze of Lemon Juice

  • Pinch of Black pepper

  • 6 Rounded Tbsps of Cool Stool™, soaked in a little warm water for 2 minutes

Method:

  1. In a large pot, melt the oil and add the onions, carrots, sweet potato, celery, thyme, garlic, and ginger. Sauté for 15 minutes until the onions are translucent.

  2. Add the remaining ingredients except for the chicken, fresh herbs, green beans, spinach, and lemon juice. Simmer covered for 30 minutes.

  3. Stir in the chicken, green beans, and spinach. Continue to simmer covered for 15-20 minutes until the chicken is cooked through.

  4. Add the fresh herbs and lemon juice. Season with additional salt and pepper if needed.

  5. Divide into portions, cool, and freeze for a convenient, gut-friendly meal.

  6. Add Cool Stool™ on reheating or around 10 minutes before serving.
